• Pan seared quail, Serrano ham, celery root purée, white wine sauce
• Salt crusted Mediterranean Sea bass, fennel, honey blood orange sauce
• Semolina gratin, forest mushroom ragout, parsley broth
• Polenta filled with braised beef, sun-choke purée, braising-jus
